Larry Kaiser isn’t your typical chef. He’s not menu planning, price checking, or running to the store for one missing ingredient.

Kaiser calls himself a farm chef, meaning the farm decides what’s cooking. Blemished tomatoes turn into marinara. Extra squash becomes ravioli filling. A jalapeƱo surplus? That’s how Tractor Fuel hot sauce happened. Nothing gets tossed, it just gets transformed.

That zero waste, old school homesteading mindset earned the farm a 2025 Farm of the Year honor from Authentic World Taste, recognizing 1760 Homestead as true ā€œtradition keepers.ā€ Their shelves are packed with farm made favorites: marinara, caponata, honey from the hives, and a growing lineup of sauces and preserves.

When the farm stand shutters for winter, the work doesn’t stop. Kaiser turns the farmhouse kitchen into a classroom, hosting intimate cooking classes that focus on what he calls ā€œforgotten methodology.ā€ Roasting peppers for the freezer, preserving food for lean months, and learning why things are done, not just how.

Then there’s the Meat Carnival, a hands-on, walk-around feast where plates, forks, and rushing are banned. You move station to station, tasting smoked wings or duck gyros with your hands and your full attention. The point? Slow down. Taste the food. Remember what you’re eating.

250th Anniversary Moments šŸ‡ŗšŸ‡ø

America’s 250th birthday is coming, and the North Fork already has a couple standout events on deck.

Greenport is getting a very special visitor

This August, the U.S. Coast Guard’s iconic tall ship Eagle will sail into Greenport and dock from August 7–10.

Eagle is nearly 300 feet long, covered in sails, and basically looks like it sailed straight out of a history book. It’s the largest tall ship flying the American flag and only comes around for big moments like this. The visit is part of the nationwide Sail the 4th 250 celebration, marking the country’s 250th birthday. Public tours will be announced closer to August.

A Broadway classic lands in Mattituck

This spring, the North Fork Community Theatre is putting on the musical 1776 from March 12–29.

The show tells the story of the debates leading up to the signing of the Declaration of Independence, but this production is intentionally inclusive, with plans to cast a woman as John Adams. Think less dusty reenactment, more bold storytelling that reflects the community sitting in the audience.

Winter Restaurant Week šŸ½ļø

If your January cooking motivation is already fading, good news: Long Island Restaurant Week is back.

The winter edition runs Sunday, January 25-Sunday, February 1, with 150+ restaurants across Nassau and Suffolk rolling out fixed-price menus designed to make winter dining feel a little more exciting.

Expect $24 two-course lunches and three-course dinners priced at $29, $39, or $46, depending on the restaurant. Restaurant Week menus are available all week, but Saturdays cut off at 7 PM.

There are also a handful of participating restaurants on the North Fork, making it easy to keep things local or, if you’re feeling adventurous, a great excuse to take a winter drive to the South Fork for a night out in the Hamptons.

There’s also a gift card giveaway in the mix. Diners can enter online for a chance to win one of three gift cards redeemable at a participating restaurant.

The winter edition is all about keeping Long Island’s dining scene buzzing during the colder months.
