Holistic Breast Cancer Care 💕

Breast cancer care is evolving, and for patients on the North Fork, it’s becoming less about choosing between treatment options and more about bringing them together.

At the 2nd annual integrative care seminar hosted by the North Fork Breast Health Coalition, nearly 90 community members gathered to learn how traditional cancer treatments and holistic therapies can work side by side.

The conversation focused on how therapies like acupuncture, meditation, nutrition, yoga, reiki, and Tai Chi can support patients alongside surgery, chemotherapy, and other conventional treatments. Experts shared how these therapies may help manage side effects, improve sleep and stamina, reduce pain, and support overall well-being during treatment and recovery.

Beyond educational programs, the coalition continues to provide hands-on support for local breast cancer patients and survivors through free wellness services, financial assistance programs, and access to resources like wigs, prosthetics, and exercise programs. ($)

AP Honor Roll 📚

Students at Mattituck Jr.-Sr. High School are earning some well deserved academic bragging rights.

The school just landed on the 2025 Advanced Placement Program School Honor Roll, earning a Gold distinction from the College Board, which is basically the academic version of getting called up to the varsity team. Students here aren’t just taking tough, college level classes, they’re showing up and delivering.

Mattituck currently offers 16 AP courses, covering everything from sciences and history to computer science and art, plus the AP Capstone program for students who really want to flex their research and critical thinking muscles.

School leaders say participation in AP classes keeps growing, even as overall enrollment trends shift. More students are stepping up, challenging themselves, and diving into coursework that pushes them a little further than the average high school class.

Housing vs. Environment Debate 🗣️

A proposed shake up to New York’s environmental review process is stirring up plenty of conversation and a little tension.

At a recent roundtable hosted by State Sen. Anthony Palumbo, local leaders, environmental advocates, and community stakeholders gathered to talk through proposed changes from Gov. Kathy Hochul that aim to speed up housing and infrastructure development statewide.

The plan would allow housing projects with up to 100 units to bypass review under New York’s environmental review law, a move supporters say could help address housing shortages by cutting down approval timelines.

Environmental advocates, pushed back during the discussion, raising concerns that loosening review requirements could weaken long standing environmental protections.

Officials from Southold Town and neighboring communities said they’re still digging into the details, trying to strike that familiar East End balancing act, supporting housing growth while protecting natural resources that make the region, well… the region. ($)

Foodie Friday 🍽

Super Bowl Sunday is one of the biggest food holidays of the year, and if there’s one undisputed MVP of the snack table, it’s chicken wings. In fact, Americans consume over 100 million pounds of wings during the Super Bowl alone, which honestly feels impressive and slightly intimidating at the same time.

Wings have earned their game day legend status for good reason. They’re shareable, customizable, and somehow manage to disappear faster than the commercials. But as wing consumption keeps climbing, so does the reality that the traditional deep fried method can pack in more calories than most of us are bargaining for by halftime.

Now, baking wings has always sounded like the healthier solution, but let’s be honest, it usually ends in disappointment. Soggy skin. Limp texture. Wings that taste fine but never quite hit that crispy, crave worthy standard we’re all chasing.

But after plenty of trial, error, and a few batches we finally stumbled onto the secret to achieving seriously crispy, oven-baked wings. The kind that give you that satisfying crunch, hold onto sauce beautifully, and still let you feel like you’re making a slightly smarter game day decision.

So whether you’re hosting, attending, or just fully committed to the couch and the snack spread, here’s how to make wings that deliver big flavor without ever touching a fryer.

What You’ll Need

  • 4 lbs whole chicken wings (You can keep them whole or split into drumettes and flats, no wrong answer here)

  • ½ tablespoon flour

  • 1 tablespoon paprika

  • ½ tablespoon black pepper

  • 1 ½ tablespoons season salt

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • ½ tablespoon dry mustard

  • 1 ½ tablespoons baking powder (Yes, this is the real secret weapon. Baking powder is what transforms oven baked wings from “pretty good” into legitimately crispy. It helps change the pH level of the chicken skin, which allows it to brown and crisp up in a way that normally only happens when frying. Or at least that’s the science explanation.)

How to Make It

  1. In a large bowl, mix the flour, all seasonings, and the baking powder together until evenly combined. Set aside.

  2. Start by preheating your oven to 250°F. It may feel low, but this step is part of the crispy-wing master plan, so trust the process.

  3. Grab your wings and dry them thoroughly with paper towels. This step is more important than it sounds. Any leftover moisture will steam the skin instead of crisping it.

  4. Once the wings are nice and dry, sprinkle your seasoning mixture over them and toss until every wing is evenly coated on all sides.

  5. Place the wings on a wire cooking rack and line the pan underneath with foil for easy cleanup. The rack is essential. It allows air to circulate around the wings while they cook and lets the rendered fat drip down instead of sitting underneath them. (Do not place the wings directly on the foil or sheet pan)

  6. Place the rack with the wings into the oven and cook at 250°F for 30 minutes. This lower temperature helps slowly render out the fat from the skin, which is a major factor in building that crisp exterior later on.

  7. After the first 30 minutes, turn the oven up to 425°F (leave the wings right where they are, no need to remove them). Continue cooking for an additional 40 to 45 minutes, until the wings are golden, crispy, and looking like they’re ready for kickoff.

They require a little planning, but great wings have never been an accident. And once these come out of the oven looking like they belong in a sports bar commercial, you’ll be very glad you trusted the process.
